Sindhis love their flatbreads, be it koki (a whole wheat masala flatbread), parathas stuffed with potatoes or moong dal, fulka (roti), chero fulko ( a simple flatbread with salt and red chilli powder) or dodo/ maani. Dodo or maani is a flatbread made of millet (jav/jowar or bajri) or rice (red or white) flour. It can be plain or with masalas like chopped onions, chillies, coriander leaves or finely chopped green garlic. Plain bajra dodo made with no salt is broken into pieces and mixed with melted jaggery to give a delectable and filling kutti that has all the goodness of winter.
Doda is served specially in winter along with saag ( a spicy preparation of winter greens), any vegetable dish or just plain chutney. It is an excellent option for those who are gluten intolerant. Many Sindhi temples and tikaana serve plain dodo and green coriander chutney as prasad.
So here is a simple recipe of the nutritious and delicious dodo.
Recipe of Sindhi Dodo
Sindhi dodo can be made plain or with masala. Making a dodo is a labour of love and should be done with patience.
Plain Dodo
Take some bajra/ jav/jowar or rice flour. Sindhis prefer the red rice flour. Add a little ghee and salt. Bind the flour a little at a time, just enough for one dodo. The dough should be soft enough to roll into a flat bread. You can either roll the dodo with a rolling pin or by pressing with the palm of your hand on a board. Apply a little dry flour if the dough is sticky. Rolling the dough on a piece of clear plastic spread on the board also works. Lift the dodo gently (you can use a metal spatula) and place it on the tava. Let the dodo roast on a gentle heat till done on both sides. Keep on flipping the dodo to roast evenly . Apply a little ghee while roasting. Serve hot with a blob of ghee or butter on top (optional).
Masala Dodo
The preparation of the masala dodo is the same as that of the plain dodo, except you add finely chopped onions with chillies and coriander leaves or finely chopped green garlic or just mint leaves and chillies to the flour before kneading. Masala dodo can be had with chutney, pickles or tea.
